One of our most popular vegetables is again arriving on the scene. This golden favorite of course is corn on the cob. If possible, try to buy corn immediately after it's been picked, then cook it right away. The fresher it is the better, as every good corn connoisseur will tell you. During the first few hours after this vegetable's been picked it will have a very sweet flavor, but then the sugar is converted to starch. For optimum eating quality, the corn should be used up before this conversion occurs. Barbecued corn is a favorite with both young and old. A time proven method of barbecuing corn is to husk each cob, spread it with butter, then sprinkle on salt and pepper. Wrap each cob in a piece of aluminum foil, then grill them on the coals for 15-20 minutes. They'll have to be turned several times for even cooking. Then bad weather drives you indoors, the cobs prepared the same way can be oven baked at 425 F for 35 minutes. If you prefer boiled corn, the mature cobs should be placed in boiling water, brought back to the boil, then cooked for 5-7 minutes only. <1mn 13s>
