Whether you grow vegetables for fun, for their special flavor or because of the cost of store produce, it's time to start deciding which vegetables should be included in the garden this year. If you wish to freeze produce for the winter months, there are some extra factors to consider. Most vegetables freeze well, with the exception of salad greens, celery, radishes and cucumbers, all of which lose their crispness. Vegetables such as carrots, turnips, cabbage and potatoes are available fresh throughout the year at a reasonable price. Rather than fill valuable freezer storage space with these vegetables, grow only enough for eating during the summer months, and possibly the fall since all of these vegetables can be stored fresh, in a cool dark place, for a couple of months. This type of planning will leave the freezer free for vegetables which aren't available fresh year round. These seasonal vegetables which freeze well include corn, beans, peas, cauliflower, broccoli, squash, brussel sprouts and swiss chard. <1mn 10s>
