Freezing has allowed us to greatly increase the variety of foods consumed during the year. Selection and care of frozen foods does require some special attention in order to maintain optimum texture, flavor, appearance and nutritional value. When shopping for frozen foods select packages which are clean, hard and undamaged. Avoid those packages which have excess frost crystals on the outside. This usually indicates that the container has been at least partially thawed and refrozen; hence the quality of the frozen product will be considerably lower. If the package has been broken or opened at any point, don't buy it. Foods exposed to the cold air of a freezer are apt to be freezer burnt. This means that they become very dry and in the case of meat leathery and tough as well. Grades are another guide to the quality of frozen foods. Frozen fruits and vegetables are graded in the same way as canned products. The grade marks you will find are Canada Fancy and Canada Choice. Canada Fancy is the top grade while Canada Choice indicates a product which will have equally good flavor and nutritional value, but less than perfect appearance. <1mn 35s>
