A hearty corn chowder can strike just the right note with your families appetite on a cold fall day and it can strike a pleasant spot on your food budget as it is made with inexpensive cream style corn. Canned vegetables of many varieties are convenient foods which we sometimes overlook In the publication "Thrifty Meals with Canned Vegetables" available from Agriculture Canada, there are a variety of ideas for using canned vegetables in soups, main dishes, casseroles and even in salads and relishes. Canned vegetables are good extenders when used in a casserole. For example in the booklet you will find a recipe called "Easy Beef Pie". This uses one pound of ground beef, one 19-ounce can green beans and one 12-ounce can whole kernel corn. By combining the canned vegetables with the ground beef you can turn that pound of ground beef into enough for 6 servings. Canned vegetables are convenient and they are a good way to ensure your family receives the vitamins and minerals they need when fresh vegetables are not available.
