Have you discovered croutons? Croutons are those small cubes of bread toasted or fried crisp and used in soups and salads or as a garnish. Their crunchy goodness sometimes tops french onion soup or is used in a tossed green salad. Croutons are sold in most food stores but if you want to make your own they are easy to do and much less expensive to make. To make croutons, cut 2 or 3 slices of bread into 1/2 inch cubes. Three slices of bread will give you about 2 cups of croutons. Toast these cubes of bread on a cookie sheet in a slow oven (300F). Turn them occasionally until the bread cubes are golden brown on all sides. To make buttered croutons melt margarine or butter in a fry pan, add the toasted bread cubes, stir until well coated on all sides with butter and they are ready to use on soups or in a salad. If you prefer to make cheese croutons, sprinkle finely grated parmesan cheese over the top of the croutons and stir until all sides are lightly coated. If your family doesn't make quick work of all the croutons the extras may be stored in a glass jar in the refrigerator. <1mn 28s>
