Many food shoppers are reluctant to buy this bargain because they think it is an inferior product. But appearance is the only area in which the Utility Grade bird is inferior. There are five grades for poultry used in Canada and Utility Grade is lower than Canada Grade A or Canada Grade B. A Utility Grade turkey will have broken skin or some part, such as a leg or wing missing, but in all other respects these birds must qualify for Canada Grade B. Although not perfect in appearance the Utility Grade bird is well fleshed and makes good eating for family meals. It is ideal for making turkey casseroles, sandwiches or salads where the appearance of the whole bird is not important.
