What happens to a 1000 pound steer when it goes to market? That's a question many people ask, especially how does beef that starts out at about 45¢ a pound end up costing well over $1.00 a pound at the meat counter. Let's look at the steps involved. That 1000 pound steer at the packers yields about 570 pounds of choice quality carcass. Only 57% of the original weight. The 570 pound carcass now moves to the retailer and at recent market prices this was at about 766 a pound. The retailer can expect to get an approximate yield of 428 pounds of meat to sell to consumers from that 570 pound carcass. What happened to the rest? The rest or 142 pounds was lost in fat, bone and cutting shrinkage. As a result of these transactions the saleable meat of the 1000 pound live steer is only 428 pounds. All cuts of beef don't sell at the same price because higher prices must be put on the cuts that move the fastest such as T-bone, porterhouse, sirloin steaks and rib roasts. On the other hand the less in demand cuts or the less tender cuts are priced at a lower level. Retail stores must price their beef so that they sell all the various cuts. So remember the fact "a steer is not all steak", a very important factor in the price you pay for beef. <1mn 59s>
