Tongue is one variety meat that when properly prepared can make a very flavorful meal. When shopping for tongue you'll notice that the most commonly available is fresh beef tongue, although fresh calf, pork and lamb tongue are sometimes sold. Beef tongue is the largest type available. The outer skin is rough,coarse and a greyish color while the meaty part under the skin is a brownish pink. A fresh beef tongue weighs anywhere from 2 to 6 pounds and when purchasing you should allow 1/3 to 1/2 pound per serving. Tongue is a less tender variety meat and does require long slow cooking in moist heat to tenderize it.
