A question that many ask is; what is wheat germ and how can it be used in family meals. Wheat Germ is that portion of the wheat which germinates if the kernel is planted. It is called the heart of the wheat as it is the most vital part. The germ is removed in the milling of white flour and refined cereals. This is because in its raw state wheat germ is highly perishable. Further processing of raw wheat germ stabilizes its valuable nutrients and makes it a desirable food. Wheat germ is a good source of protein, iron and B vitamins. Most commonly wheat germ is used as a breakfast cereal and served with milk and sugar. But it does have many other possi-bilities: as it can be used in breads, main dishes, desserts and snack foods. In quick breads and yeast breads, for each cup flour in the recipe use 1/4 cup wheat germ and 3/4 cup flour. When making a meat loaf or hamburger patties use wheat germ as a meat extender. Add 1/4 cup wheat germ and 2 tablespoons catsup, to 1 pound of ground beef or pork. For a casserole topping, sauti wheat germ in melted butter or margarine and sprinkle on the casserole before baking. You might even try wheat germ as a breading for fried chicken or a few tablespoons tossed with salad greens. <1mn 35s>
