When you're barbecuing this summer, don't forget kabobs. They are an old favorite with dozens of variations. Kabob skewers come in a variety of sizes. You can get very long ones if you have a large barbecue or shorter ones if you have a small hibachi. Shishkabobs are basically chunks of meat, marinated and strung on skewers. The meat is usually alternated with various kinds of vegetables. The meat you use should be tender and boneless for kabobs. Two pounds of meat will give you approximately 6 servings. Vegetables which cook quickly such as tomato wedges, very small onions, mushrooms, green pepper pieces may be cooked with the meat or alone for about 10 to 12 minutes. They should be marinated or seasoned with salt and pepper and brushed with oil and marinade during the cooking. To prepare you kabobs dip the skewers in oil or rub fat on them to keep the foods from sticking. Thread the meat on vegetables alternately on the skewer leaving a few inches at each end so that it may be held of propped on your grill. Place the kabob about 3 to 5 inches from the coals turning frequently during cooking. When they are ready to serve just push the cooked food from the skewers and serve with hot rice or noodles. <1mn 44s>
