What are health foods? Are they better for you than regular foods? Is there a difference? I thought because of the amount of publicity that has been given to health foods lately that we might look at them a little more closely and see exactly what they are. The term health food itself implies that these foods are superior in nutrient value to regular foods purchased in grocery stores. The term misleads the public and discredits our excellent food supply. Health foods stores promote the use of a wide variety of dietary supplements. One can't help but wonder if the health food promoters feel that if their foods are so superior nutritionally why do they also promote the use of so many dietary supplements. For each supplement a special claim is made, for instance pantothenic acid which is part of the B vitamin group (is claimed to prevent grey hair). The truth is, although a requirement for pantothenic acid has been established for some animals and rats with black fur turn grey under the conditions of pantothenic acid deficiency. There has been no evidence of human requirement for this vitamin. It won't prevent grey hair in man and it is found in many of our foods. Among the good sources are organ meat, muscle meat, milk, whole grain cereals, eggs and certain vegetables and legumes. Another claim is that fertilized eggs are superior to regular eggs because they contain hormones not found in regular eggs. The truth is that fertilized eggs do not contain additional hormones and they have the same nutritive value as regular eggs. however, because they are fertile they have very limited keeping time and the quality of the eggs is below agricultural standards for regular eggs. The yolk is not as firm as a regular egg and the white is very liquid. And if they are not consistently stored at regular refrigeration temperatures, the eggs will germinate and deteriorate. You may also be interested to know that a survey was made in February 1972 and one dozen medium eggs at that time cost 39 cents in a supermarket and the same size fertilized eggs in a health food store cost 60 cents a dozen. <2mn 51s>
