With the Christmas and New Year's season just past, many of us are looking for new ways of serving economical meals so I thought I would talk to you about legumes. Some of the best known ones are peas, beans, lima beans, peanuts and lentils. They contain proteins, carbohydrates, fats, minerals and some vitamin B. So you can prepare low cost meals using legumes without sacrificing good nutrition for your family. Beans are probably the most familiar legume to us all. Canada's Food Guide suggests that dried beans or peas may be used in the pace of meat in the days' menu. There are many types of dried beans differing in size, shape and color. The small white pea bean is often call the Navy ben, yellow-eyed beans are larger than pea beans and are oval in shape, yellowish in colour with a brown saddle. Dry beans are usually sold in 1 or 2 pound packages. Directions for cooking and soaking are usually printed on the outside of the package wrapper. There's nothing quite as nice as the smell of home-made beans drifting through the house and if you think beans made at home are a tedious or lengthy procedure, try the new quick soak method of preparing beans as described in the beans booklet put out by Canada Agriculture. This recipe booklet also has ideas for using beans either home made or canned.
