General note:

Once the railroad had been completed to the Pacific coast, many of the Chinese workers who had laboured on the railroad moved to jobs in B.C.'s salmon
fishery. This machine was invented as a replacement for Chinese workers, many of whom were skilled with knives. The machine cut off the head, tail, fins and gut
the salmon in about 1 second. Workers obviously had to be deft in the use of this machine or else they would lose their fingers
